vego and vegan recipes

Tasty enough that the whole family will eat it too.
Lentil Soup
ingredients
1 tbsp olive oil
2 onions, finely chopped
2 celery sticks, finely chopped
2 carrots, finely chopped
2 garlic cloves, crushed
2 tsp of curry powder or paste
150g red lentils
1.4ltrs vegetable stock
120ml tomato or vege juice
pepper to taste.
Method
1. Heat the oil in a large pot, add onions, celery and carrots. Cook stirring for 5 minutes or until the onions are soft and translucent.
2. Add the garlic and curry paste. Cook stirring for a further 1 minute, then add the stock, lentils and tomato juice.
3. Bring to the boil, then lower the heat. Simmer for 25 minutes or until the vegetables are tender. Season to taste with salt and pepper to taste.
I double the qtys for a decent batch. I use Vegeta brand vegetable stock powder, It has lower salt and is animal product free. Still more than enough salt that I can't envisage adding more as per the recipe.
The soup is filling and goes well with a crusty bread.

One of my go-to meals is Mee Goreng (Singapore style) and this is the vegan version :
Recipe (can be varied according to taste)
Ingredients:
Sesame oil, around 3 tablespoons
2 cloves garlic, finely minced
Dried bean curd (this is the protein substitute, use however much you want), cut into 2cm bits
Small potatoes (2), boiled, peeled, and cut up into into whatever shape you like, I do wedges
1 big tomato, cut into wedges
A small handful fresh bean sprouts
500g fresh yellow noodles, rinsed-drained
Chopped spring onion (garnish)
Red chili, (garnish)
Fried shallots, (garnish)
1 lime, cut into wedges
Sauce:
1-2 tablespoon soy sauce (personal preference for which one and how much, prefer Kikkoman)
1-2 tablespoon ketjap manis (same)
3 or so tablespoons tomato sauce (preferably one of the thicker ones, eg; Heinz)
Sugar + salt (according to taste, but be sparing)
Method:
Combine sauce components in a mixing bowl, whisk until fully combined.
Heat a large wok and pour in the sesame oil, cover the sides with the oil.
Add garlic and stir fry until aromatic, add the bean curd + potato + tomato wedges.
Do a few quick stirs and then add the noodles, then the Sauce and continue stirring until everything is well combined. Season to taste.
Throw in the sprouts and quick stir for another minute or so, making sure to get everything coated by sauce.
Turn off the heat, plate up, garnish with whatever combination of spring onion, red chili, and fried shallots you like, squeeze a bit of the lime juice over the noodles before eating. Enjoy food coma..

Red Curry with Cashews
Ingredients
250g firm tofu cut into 2cm cubes
500ml light coconut milk
dash of lime juice
1/2 tsp soy sauce
125g baby corn cobs sliced lengthways
250g broccoli florets
250g green beans, cut into 5cm pieces
1/2 cup of cashew nuts
fresh basil leaves
1 tbsp chopped coriander
2 tbsp red curry paste
1-2 tbsp roasted chopped peanuts to garnish
Method
1. Heat a dash peanut oil in a wok and brown the tofu on a high heat.
Add the curry paste and heat until it gives off its' aroma. Reduce the heat to medium.
2. Add the coconut milk, soy sauce, lime juice, baby corn, broccoli, green beans and cashews.
Bring to the boil and simmer for about 10 mins, until the veges are cooked but still firm and crunchy.
3.Stir in the basil leaves and coriander. Serve over a bed of basmati rice and garnish with peanuts.

Not bad. I didn't add the salt, forgot.
I am a very basic cook so if I can rustle it up anyone can.
Chickpea curry
Ingredients
For the paste
2 tbsp oil
1 onion, diced
1 tsp fresh or dried chilli, to taste
9 garlic cloves (approx 1 small bulb of garlic)
thumb-sized piece ginger, peeled
1 tbsp ground coriander
2 tbsp ground cumin
1 tbsp garam masala
2 tbsp tomato purée
For the curry
2 x 400g cans chickpeas, drained
400g can chopped tomatoes
100g creamed coconut
½ small pack coriander, chopped, plus extra to garnish
100g spinach
To serve
cooked rice and/or dahl
Method
STEP 1
To make the paste, heat a little of the 2 tbsp oil in a frying pan, add 1 diced onion and 1 tsp fresh or dried chilli, and cook until softened, about 8 mins.
STEP 2
In a food processor, combine 9 garlic cloves, a thumb-sized piece of peeled ginger and the remaining oil, then add 1 tbsp ground coriander, 2 tbsp ground cumin, 1 tbsp garam masala, 2 tbsp tomato purée, ½ tsp salt and the fried onion. Blend to a smooth paste – add a drop of water or more oil, if needed.
STEP 3
Cook the paste in a medium saucepan for 2 mins over a medium-high heat, stirring occasionally so it doesn’t stick.
STEP 4
Tip in two 400g cans drained chickpeas and a 400g can chopped tomatoes, and simmer for 5 mins until reduced down.
STEP 5
Add 100g creamed coconut with a little water, cook for 5 mins more, then add ½ small pack chopped coriander and 100g spinach, and cook until wilted.
STEP 6
Garnish with extra coriander and serve with rice or dhal (or both)

Did you find it dominating the taste? I know a lot of Americans like Cumin and it's included in a lot of BBQ dry rubs and we find it rather overpowering and it overtakes the taste of other ingredients. But that is just me and Mrs who think that but it's like I can take a lot more salt than the wife can, she hates it when i over salt meats for the BBQ, but I love salt on beef. (ooops I know this is supposed to be a vegan thread....I used blasphemy )
I love vegetables and will eat 95% what is out there, at least 60% of what I BBQ is vegetable but I can't be vegan, too much a carnivore

No not at all.
It came out of a shaker jar into a spoon so may have been a bit less.
My wife is a chef and even she went back for seconds.
I'm not a strict vegetarian either, I eat a bit of fish and the odd egg or two.
Happy enough with that.
Just trying to maintain my health and live a bit longer.

I can assure you that if food boredom was fatal, I'd be long dead.
But since Nepal has one of the lowest average BMIs in the world, Dal Bhat doesn't appear to be doing them much harm.

She has some ordinary eating habits at times and could lose weight already.
That was an improvement.
Reheated the leftovers tonight. Some lowfat yoghurt (a bit much) slapped on top.

Aren't you the same guy who posted about the problems associated with the consumption of dairy in another thread? Have casomorphins and cheese got a grip on you too? Admitedly soy yogurt and such might be a bit harder to get out there in the sticks. Most of the health conscious people with money to spend on more niche/boutique health foods usually live in wealthier parts of major cities. Not that I'm one of them. It's all simple stuff for me.

I can handle a bit of yoghurt and it is very low fat.
Goes well with spicy food. My 3 fresh chillies and the other spices gave it a mild bit of heat.
Milk is a no go.
An iced coffee would have me spray painting. Think it is the higher lactose content.
